Twice Baked Potato
You can make these so many ways.
Usually I bake them, so to speak in the microwave, approximately 4 minutes per potato on high (You can also bake in the oven for about an hour at 350 degrees F). When they are soft to put a fork into, they are done. Cut in half the long way. Use a spoon to scoop out most of the potato shell into a bowl, leaving about a 1/4 of potato in the shell. Take the scooped out potatoes in the bowl and mash them well, and add salt, pepper, butter or margarine (or vegan margarine) and this is ready to put into the crisp shells when they come out of the oven.
As a special treat, try adding some of your favorite cheese or roasted garlic, let your mind wander, cooking is supposed to be fun.
This step is optional but does help. Take some melted butter, and brush the shells, pop into the oven at 375 degrees F for about 10 minutes to crisp up the skins.
Take out and add in the mashed potatoes created in the previous step. Return to the oven and bake at 350 degrees F for an additional 30-40 minutes.
